Morcilla

The Spanish version of Blood Pudding.  Delicious! For a culturally Midwestern boy who grew up on Kraft Mac n Cheese and Wonder bread, it was quite a shock! Now I love it. there are different styles depending on the region. In Leon it’s more of a soft dish served in a cazuela, or a shallow terra cotta bowl with a vertical rim .
